Napa cabbage, Carrot, Daikon and Hawaiian Ginger sourced from Weaver’s Way Farm in Manayunk. This is my vegan and kosher version of kimchi. The cabbages are quartered, brined in a two step process and then each each leaf is given a loving smear of the chili paste mixture. Fermented for over a month, this kimchi has a complex flavor with a citrus undertone and is for those who like a bit of spice!!! Available in pints and quarts.
